Roasted Vegetables & Chickpeas

If you want to cook something that tastes AMAZING but is super easy to make then this is for you!!!

⭐Roasted Vegetables & Chickpeas⭐

Serves 4-5


🥄1xpacket The Gathered Bowl Almond & Turmeric Pattie Mix

🥄400g Can Chickpeas
🥄1tsp Cumin
🥄1/2tsp ground corriander seed
🥄salt to taste
🥄4xCarrots (cut lengthways)
🥄1xCapsicum (cut into strips)
🥄2cups Pumpkin (cubed)
🥄2xZucchini (cut into strips)
🥄1xRed Onion (quartered)
🥄1cup Yoghurt (Greek or Vegan Coconut)
🥄1Tbs Honey or Maple Syrup
🥄Fresh Mint

🥄Olive Oil


1.Heat oven to 180 degrees C

2.Toss carrots, pumpkin, capcicum, zucchini & onion in a little olive oil and place in the oven to roast until cooked through
3.Drain Can of Chickpeas.
4.Add drained chickpeas to a bowl along with cumin, corriander, salt to taste & 2tsp olive oil. Toss.
5.Place on a lined backing dish place in oven to roast.
6.Make up 1xpacket of Almond & Turmeric Pattie Mix as per instructions.
7.approx 10 mins before the chickpeas and vegetables have finished roasting form Patties and fry in a little oil.
8.Once everything is cooked plate in the following way....
Spoon yoghurt onto large serving plate (or individual plates). Place roasted carrots & chickpeas on then drizzel honey/maple syrup. Place other roasted veg, Patties & Mint on top.

Note: How thick you cut your veg will determine roasting times)
